Quality Sparkling Wine - Metodo Classico Brut
This is a wine full of contrasts, in which the sweetness of its fragrance is counterbalanced by notable tanginess and freshness: for those who have the courage to dare, as well as to try out unusual food pairings.
DENOMINATION: Quality Sparkling Wine - Metodo Classico Brut.
GRAPES: Malvasia 100%.
PRODUCTION ZONE: Caprino Veronese and Rivoli Veronese.
VINE PROTECTION METHODS: Integrated pest management; controlled environmental impact.
HARVEST PERIOD: First week of September.
PRODUCTION METHOD: Soft pressing of the grapes and careful selection of the free-run juice. Low-temperature alcoholic fermentation for 20 days in stainless steel vats, at 12°C. Addition of liqueur de tirage and bottling. Second fermentation in bottle and maturation on its lees for 12-24 months. Remuage, disgorgement and addition of liqueur d’expédition.
ANALYTICAL DATA: Alcohol 12.50 % vol.
COLOUR: Straw yellow with golden highlights.
PERLAGE: Fine and very dense.
NOSE: Sweet white flowers (magnolia, acacia and orange blossom) accompanied by aromatic herbs and citrusy notes of orange zest.
FLAVOUR: Very tangy and refreshing, with a finish reminiscent of bitter almonds.
SERVING SUGGESTIONS: Dishes with a touch of sweetness, such as pumpkin tortelli or a baked fillet of fish.
SERVING TEMPERATURE: 6°-8°C.
