Graceful, delicate and gentle: that is the character of Baldovino Bianco. A wine that is delicious with the light, fresh dishes of summer.
DENOMINATION: Veneto Bianco I.G.T.
GRAPES: Traminer 40% - Garganega 40% - Chardonnay 10% - Malvasia 10 %.
PRODUCTION ZONE: Caprino Veronese and Rivoli Veronese.
VINE PROTECTION METHODS: Integrated pest management; controlled environmental impact.
HARVEST PERIOD: Second half of September.
PRODUCTION METHOD: Brief maceration with the skins, and pressing. Careful selection of the free-run juice. Alcoholic fermentation at a controlled temperature of 12°C for around 20 days, followed by cooling of the wine to below 5°C. Maturation in temperature-controlled stainless steel tanks. Natural tartaric stabilisation.
ALCOHOL: 13% vol.
COLOUR: Straw yellow with some golden highlights.
NOSE: White-fleshed fruit (peaches and Stark apples) and fresh white wild flowers.
FLAVOUR: Rounded, but underpinned by good tanginess and acidity.
SERVING SUGGESTIONS: Grilled fish, fresh pasta and moderately mature cheeses.
SERVING TEMPERATURE: 10°-12°C.
