Bardolino D.O.C. – Chiaretto Spumante Brut – Metodo Classico
Elegance, delicacy and finesse are the qualities of this Classic/Traditional Method sparkling wine that came about as a bit of a gamble, to see what we could achieve with our Corvina. We are very proud of the result.
DENOMINATION: Bardolino D.O.C. – Chiaretto Spumante Brut – Metodo Classico.
GRAPES: Corvina 70% - Rondinella 20% - Other varieties (Molinara, Negrara, Sangiovese) 10%.
PRODUCTION ZONE: Caprino Veronese and Costermano sul Garda.
VINE PROTECTION METHODS: Integrated pest management; controlled environmental impact.
PERIOD OF HARVEST: Second half of September.
PRODUCTION METHOD: Soft pressing of the grapes and careful selection of the free-run juice. Low-temperature alcoholic fermentation for 20 days in stainless steel vats, at 12°C. Addition of liqueur de tirage and bottling. Second fermentation in bottle and maturation on its lees for 20-36 months. Remuage, disgorgement and addition of liqueur d’expédition.
ALCOHOL: 12,50% vol.
COLOUR: Brilliant pale rosé.
PERLAGE: Fine and very dense.
NOSE: Bouquet of pink flowers (peonies and roses) accompanied by small red fruits (Morello cherries and redcurrants) and hints of aromatic herbs.
FLAVOUR: Tangy and refreshing, with an attractive citrusy aftertaste.
SERVING SUGGESTIONS: Hors d’oeuvres and fish-based pasta or rice dishes.
SERVING TEMPERATURE: 6°-8°C.
